Chocolate Chip Cheesecake Bars Recipe

Ingredients 

For the Cookie Dough: – ½ cup unsalted butter, softened – ½ cup brown sugar – ¼ cup granulated sugar – 1 large egg – 1 tsp vanilla extract – 1¼ cups all-purpose flour – ½ tsp baking soda – ¼ tsp salt – 1 cup semi-sweet chocolate chips For the Cheesecake Filling: – 8 oz cream cheese, softened – ¼ cup granulated sugar – 1 large egg – ½ tsp vanilla extract

Instructions

In a bowl, cream butter and sugars. Beat in egg and vanilla. Mix in flour, baking soda, salt, and stir in chocolate chips.

In a separate bowl, beat cream cheese until smooth. Add sugar, egg, and vanilla. Mix until fully combined.

Press half of the cookie dough into the bottom of the pan. Pour cheesecake mixture over it. Drop remaining dough in small spoonfuls on top.

Bake for 30–35 minutes or until the top is lightly golden and center is set. Cool completely, then chill for at least 2 hours before slicing.

Serve & enjoy: Cut into bars. Store leftovers in the fridge for up to 5 days.
