Easy Zucchini Carrot Bread

Ingredients 

– 1 1/2 cups all-purpose flour – 1/2 tsp baking soda – 1/2 tsp baking powder – 1 tsp cinnamon – 1/4 tsp salt – 2 eggs – 1/2 cup vegetable oil – 2/3 cup sugar – 1 tsp vanilla extract – 1 cup grated zucchini – 1/2 cup grated carrot – Optional: 1/4 cup chopped nuts or raisins

Instructions

In a bowl, whisk together 1 1/2 cups flour, 1 tsp cinnamon, 1/2 tsp baking soda, 1/2 tsp baking powder, and 1/4 tsp salt. Set aside.

In another bowl, whisk 2 eggs, 1/2 cup oil, 2/3 cup sugar, and 1 tsp vanilla. Stir in 1 cup grated zucchini and 1/2 cup grated carrot.

Add the dry mixture to the wet ingredients. Stir until just combined. Optional: fold in 1/4 cup chopped walnuts or raisins.

Pour batter into a greased 9x5" loaf pan. Bake at 350°F (175°C) for 50–60 minutes, or until a toothpick comes out clean from the center.

Let the bread cool in the pan for 10 minutes, then transfer to a rack. Slice and enjoy warm, or store for a delicious snack anytime.
