Mexican Chicken Casserole

Ingredients 

– 2 chicken breasts – 1 packet taco seasoning – 1 can black beans (15 oz), drained – 1 cup corn (frozen or canned) – 1 cup salsa – 4 oz cream cheese – 6–8 small flour tortillas – 2 cups shredded cheese (cheddar or Mexican blend) – Optional: chopped onion, cilantro, avocado, sour cream

Instructions

Season 2 chicken breasts with taco seasoning and cook until done. Shred the chicken with forks and set aside.

In a bowl, combine shredded chicken, 1 can black beans (drained), 1 cup corn, 1 cup salsa, and 4 oz cream cheese until creamy.

In a baking dish, layer tortillas, chicken mixture, and shredded cheese. Repeat layers ending with cheese on top.

Bake at 375°F (190°C) for 25–30 minutes until bubbly and cheese is golden. Let cool slightly before serving.

Garnish with chopped cilantro, avocado, or sour cream. Perfect as a hearty meal for family or entertaining guests.
