Strawberry-Rhubarb Crumble Bars Recipe

Ingredients 

For the Crust & Crumble: – 1½ cups all-purpose flour – 1½ cups old-fashioned oats – ¾ cup brown sugar (packed) – ½ tsp baking powder – ¼ tsp salt – ¾ cup unsalted butter, melted – 1 tsp vanilla extract For the Filling: – 1½ cups diced rhubarb (fresh or frozen, thawed and drained) – 1½ cups diced strawberries – ⅓ cup granulated sugar – 2 tbsp cornstarch – 1 tbsp lemon juice

Instructions

In a bowl, mix flour, oats, brown sugar, baking powder, and salt. Stir in melted butter and vanilla until crumbly.

Firmly press about 2/3 of the crumble mixture into the bottom of the prepared pan to form the crust.

In a bowl, toss strawberries and rhubarb with sugar, cornstarch, and lemon juice until evenly coated.

Spread the fruit mixture over the crust. Sprinkle remaining crumble mixture on top.

Bake for 40–45 minutes or until the topping is golden and fruit is bubbly. Cool completely before slicing.

Cut into squares and enjoy! Store leftovers in the refrigerator for up to 4 days.
