Sweet and Sour Chicken Recipe

Ingredients 

For the Chicken: – 1½ lbs boneless, skinless chicken breast (cut into 1-inch pieces) – ½ cup cornstarch – 2 large eggs (beaten) – ½ cup all-purpose flour – Salt and pepper to taste – Oil for frying For the Sauce: – ½ cup rice vinegar or white vinegar – ½ cup granulated sugar – ¼ cup ketchup – 1 tablespoon soy sauce – 1 tablespoon cornstarch + 2 tbsp water (slurry) – ½ cup pineapple juice (optional for extra sweetness) Add-ins: – 1 cup red bell pepper (chopped) – 1 cup green bell pepper (chopped) – 1 cup pineapple chunks – ½ cup onion (chopped)

Instructions

Season chicken with salt and pepper. Dredge pieces in cornstarch, then dip in beaten eggs, and coat with flour.

Heat oil in a deep skillet or wok. Fry chicken in batches until golden and crispy. Drain on paper towels.

In a separate pan, sauté bell peppers, onions, and pineapple chunks until just tender.

In a saucepan, mix vinegar, sugar, ketchup, soy sauce, and pineapple juice. Bring to a simmer. Stir in cornstarch slurry to thicken.

Toss fried chicken and sautéed veggies with the sauce. Stir until evenly coated and heated through.

Serve hot over steamed white rice or noodles. Garnish with green onions or sesame seeds if desired.
